Raw Cacao Mint Muse Bites

 

Using fresh, raw, organic produce is the ultimate if you can source them!

Base

  • 1 cup raw cacao powder
  • 4 cups ground raw cashews (process your cashews in a food processor – some bigger pieces will remain, this gives your base some texture.)
  • 1 cup pecans, roughly chopped
  • 1/2 cup Agave nectar or Jarrah honey
  • 1 scraping of a vanilla pod (or finely chop up a good 2 inches of the entire pod)
  • 1/2 cup pure organic tahini
  • 1 tsp cinnamon
  • 2 tbsp fresh lemon juice
  • 1/2 cup Alkaline water (or purified water)

 

Mix your ingredients by hand, in a large bowl.

Press into a tin and dehydrate at 45 degrees Celsius for 12 hours.

Once dehydrated, cover and place your base in the fridge, as you prepare the cacao mint middle.

Cacao Mint Middle

  • 1 cup cashews, soaked in Alkaline or purified water for 20 minutes, then rinsed
  • 3/4 cup raw organic cacao butter, (measured when solid. Chopped small then melted)
  • 1/4 cup Agave nectar or Jarrah honey
  • 1/2 tsp fresh lemon juice
  • 1/4 cup tightly packed fresh mint leaves
  • 6 drops of essential mint oil (‘six’ is the number of love)

 

Blend all the ingredients in a high-speed blender or processor until smooth. Evenly spread on top of the base that’s been chilling in the fridge.

Place in the freezer whilst whipping up your yummy raw cacao topping

Dehydrated base and filling

 

Cacao Top

  • 1 cup raw cashews, soaked 20 minutes in alkaline or purified water, then rinsed
  • 3/4 cup raw cacao butter, (measured when solid, chopped small and then melted)
  • 1/4 cup raw cacao powder
  • 1/4 cup Agave nectar or Jarrah honey
  • 1/2 tsp fresh lemon juice
  • 1/4 cup alkaline or purified water
  • 2 inches of vanilla pod scrapped or (2 inches of the entire pod piece finely chopped)

Blend all ingredients in a high-speed blender or processor until smooth.

Take the tin from the freezer. The mint layer is now firm enough to evenly spread this final layer on top.

Once the final layer has been smoothed out, leave your delicious creation in the fridge overnight to set. (patience is a virtue).

 

 

After they have chilled out, your Raw Cacao Mint Muse Bites are ready to be removed from the tin and cut into small squares.

Serve them with a garnish of fresh mint and a sprinkle of magic dust!

Cacao Mint Muse Bites

You can refrigerate your Muse Bites for a week, or freeze and defrosted them as desired.
